Preparing the Prime Rib

    Season the Roast

    Preheat your oven to 450°F (232°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, rosemary, and thyme. Rub the mixture all over the prime rib roast. Drizzle olive oil over the roast and rub it in to ensure the seasonings adhere.

    Roasting the Prime Rib

    Place the seasoned prime rib on a rack in a roasting pan. Roast in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until it reaches your desired doneness (135°F for medium-rare).

    Resting the Roast

    Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Making the Red Wine Jus

    Sauté Shallots

    While the roast is resting, heat a saucepan over medium heat. Add the butter and allow it to melt. Add the chopped shallots and sauté until they are soft and translucent.

    Deglaze with Red Wine

    Pour in the red wine and bring it to a simmer. Scrape the bottom of the pan to release any browned bits. Allow the wine to reduce by half.

    Once the wine has reduced, add the beef broth. Simmer for about 10-15 minutes until the jus thickens slightly. Strain the jus if desired and serve alongside the prime rib.
