Prepare the Prime Rib

    Season the Roast

    Preheat your oven to 500°F (260°C). In a bowl, mix together the kosher salt, black pepper, garlic powder, rosemary, thyme, and olive oil. Rub this mixture all over the prime rib roast, ensuring it is well coated.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Meat

    Remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Make the Au Jus

    Prepare the Au Jus

    In a saucepan over medium heat, add chopped shallots and sauté until translucent. Pour in the red wine and let it simmer until reduced by half. Add the beef stock and thyme, and let it simmer for 15-20 minutes. Season with salt and pepper to taste.

Make the Creamy Horseradish

    In a bowl, mix together the sour cream, prepared horseradish, Dijon mustard, and lemon juice. Season with salt and pepper to taste.

Roast the Bone Marrow

    Prepare and Roast Bones

    Preheat the oven to 450°F (232°C). Place the beef marrow bones upright on a baking sheet, sprinkle with sea salt, and roast for about 15-20 minutes, until the marrow is bubbly and slightly browned.
