Preparing Won Ton Chips

Fry Won Ton Wrappers
In a deep skillet, heat the vegetable oil over medium-high heat. Cut the won ton wrappers into triangles. Fry the wrappers in batches until they are golden brown and crispy, about 1-2 minutes. Remove them from the oil and drain on paper towels.
Making Ahi Poke

Prepare Ahi Poke
In a bowl, combine the diced Ahi tuna, soy sauce, sesame oil, chopped green onions, sesame seeds, diced avocado, and sea salt. Mix gently to combine and set aside.
Making Spicy Aioli

Prepare Spicy Aioli
In a small bowl, whisk together the mayonnaise, Sriracha sauce, lime juice, minced garlic, and salt until smooth. Adjust seasoning to taste.
Assembling Nachos

Assemble Ahi Poke Nachos
Layer the fried won ton chips on a serving platter, top with the Ahi poke mixture, and drizzle with spicy aioli. Serve immediately.
