Method

Fried Chicken Preparation

  1. 1

    Marinate the Chicken

In a bowl, combine buttermilk and chicken pieces. Cover and marinate in the refrigerator for at least 2 hours or overnight.

  2. 2

    Prepare the Coating

In a separate bowl, mix flour, paprika, garlic powder, salt, and black pepper.

  3. 3

    Fry the Chicken

Heat vegetable oil in a deep pan over medium heat. Remove chicken from buttermilk, allowing excess to drip off, then coat in the flour mixture. Fry chicken pieces until golden brown and cooked through, about 12-15 minutes. Drain on paper towels.

Coriander Maple Glaze

  1. 4

    Prepare the Glaze

In a small saucepan, combine maple syrup, chopped coriander, soy sauce, and lime juice. Heat over medium heat until warmed and well combined, about 3-5 minutes.

Grilled Corn

  1. 5

    Grill the Corn

Preheat grill to medium-high heat. Brush corn with melted butter and sprinkle with salt. Grill corn for 10-12 minutes, turning occasionally until charred and tender.

Mashed Potatoes

  1. 6

    Cook the Potatoes

In a large pot, boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 7

    Mash the Potatoes

Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and black pepper to taste.
