Broth

Pork Belly

Method

Prepare the Broth

  1. 1

    Sauté Aromatics

In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, and sauté until fragrant, about 2 minutes.

  2. 2

    Add Broth Ingredients

Pour in chicken broth, soy sauce, and miso paste. Stir until the miso is dissolved. Bring to a gentle simmer and let cook for 20 minutes.

  3. 3

    Finish the Broth

Add sesame seeds and season with salt and pepper to taste. Keep warm.

Cook the Pork Belly

  1. 4

    Prepare the Pork

Preheat the oven to 300°F (150°C). Season the pork belly with salt, black pepper, and brown sugar.

  2. 5

    Roast the Pork

Place pork belly on a baking sheet and roast for 2 hours, or until tender. Let rest before slicing.

Make the Shrimp Dumplings

  1. 6

    Prepare Filling

In a bowl, mix together shrimp, green onions, minced garlic, and salt until combined.

  2. 7

    Assemble Dumplings

Place a small spoonful of filling in the center of each dumpling wrapper. Moisten edges with water and fold over to seal.

  3. 8

    Cook Dumplings

Steam dumplings in a steamer basket for about 8-10 minutes until cooked through.

Assemble the Ramen Bowl

  1. 9

    Combine Ingredients

In a ramen bowl, ladle the sesame broth. Add sliced pork belly, steamed shrimp dumplings, and soft-boiled eggs.

  2. 10

    Add Toppings

Top with nori sheets, chopped green onions, and drizzle with chili oil to taste.
