Burger Patty

    Prepare the Patties

    In a mixing bowl, combine the Makaweli beef, wild boar, salt, and black pepper. Form into two equal-sized patties.

Bacon Jam

    Make Bacon Jam

    Cook the bacon in a skillet over medium heat until crispy. Remove bacon and drain on paper towels. In the same skillet, add chopped onion and cook until caramelized. Add bacon back to the skillet with brown sugar and apple cider vinegar. Cook until thickened and set aside.

Caramelized Onions and Mushrooms

    Sauté Onions and Mushrooms

    In a separate pan, heat olive oil over medium heat. Add sliced onions and cook until caramelized. Add sliced mushrooms, salt, and pepper, and continue cooking until mushrooms are tender.

Chipotle Aioli

    Prepare Chipotle Aioli

    In a small bowl, mix together mayonnaise, chopped chipotle peppers, and lime juice until well combined.

Assembly

    Assemble the Burger

    Grill or pan-fry the patties until cooked to your liking. Toast the burger buns and spread chipotle aioli on each side. Layer the patty, bacon jam, caramelized onions, and mushrooms on the bottom bun. Top with the other half of the bun and serve.
