Method

Prepare the Broth

    Cook the Aromatics

    In a large pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.

    Combine Ingredients

    Pour in the chicken stock, soy sauce, miso paste, salt, and black pepper. Stir well to combine and bring to a simmer.

    Simmer

    Let the broth simmer for about 20 minutes to allow the flavors to meld.

Prepare Toppings

    Boil the Eggs

    In a separate pot, boil water. Carefully add the eggs and cook for 7 minutes for soft-boiled. Remove and cool in ice water before peeling.

    Roast Tomatoes

    Preheat the oven to 400°F (200°C). Halve the tomatoes and place them on a baking sheet. Drizzle with olive oil and roast for 15-20 minutes until soft.

    Slice Pork Belly

    If not already cooked, prepare the pork belly by cooking it until crispy, then slice into bite-sized pieces.

Cook Noodles and Assemble

    In a pot of boiling water, cook the ramen noodles according to package instructions. Drain and set aside.

    In a serving bowl, place a portion of ramen noodles, ladle the sesame broth over the noodles, and top with roasted tomatoes, sliced pork belly, halved boiled eggs, green onions, and nori strips. Add pillow pasta on the side.
