Preparation

    Prepare the Steak

    Season the ribeye steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Prepare the Pomme Frites

    Cut the russet potatoes into thin strips. Rinse them in cold water and pat dry with paper towels.

    Prepare the Bone Marrow

    Preheat the oven to 450°F (230°C). Place bone marrow bones cut side up on a baking sheet and season with salt. Roast for about 15-20 minutes, until the marrow is soft and bubbly.

    Prepare the Watercress Salad

    In a bowl, toss the watercress with olive oil, lemon juice, and salt to taste. Set aside.

Cooking

    Cook the Steak

    Heat olive oil in a cast iron skillet over high heat. Once the oil is hot, add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Fry the Pomme Frites

    In a deep pot, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, season with salt.

Serving

    Plate the Dish

    Serve the charred ribeye steak alongside the crispy pomme frites, roasted bone marrow, and watercress salad. Garnish with fresh parsley and serve with lemon wedges.
