Preheat the oven to 375°F (190°C). Cut the jalapeños in half lengthwise and remove the seeds. In a bowl, mix cream cheese and chopped cilantro until smooth. Stuff the jalapeño halves with the cream cheese mixture and place them on a baking sheet.

Peel and dice the potatoes into small cubes. Toss with olive oil, salt, and black pepper. Spread on a baking sheet and bake in the oven alongside the jalapeños for about 25-30 minutes, or until golden brown and crispy.
