Prepare the Cherry Tomatoes
Preheat your oven to 200°C (400°F). Cut the cherry tomatoes in half and place them on a baking tray. Drizzle with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until they are soft and slightly caramelized.

Prepare the Cebollita
While the tomatoes are roasting, chop the cebollitas into small pieces. Set aside.

Assemble the Dish
In a serving dish, layer the roasted cherry tomatoes. Grate or slice the aged cheddar cheese and sprinkle it over the tomatoes. Add dollops of salsa ranchera on top.

Finish with Queso Fresco
Crumble the queso fresco over the assembled dish and add the chopped cebollitas for garnish.

Serve the Antiguas immediately while warm, and enjoy!
