Preparation

Prepare the Quail

Clean and rinse the quail under cold water. Pat dry with paper towels. Season the quail inside and out with olive oil, garlic powder, cumin, paprika, salt, and black pepper.

Prepare the Jalapeño Rellenito

Slice the jalapeño peppers lengthwise and remove the seeds. Stuff them with a mixture of cream cheese and smoked sausage. Secure with a toothpick if necessary.

Cook the Nopales

Boil the nopales in salted water for about 10 minutes until tender. Drain and set aside.

Grilling

Grill the Quail

Preheat the grill to medium-high heat. Place the seasoned quail on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Grill the Jalapeño Rellenito

Place the stuffed jalapeños on the grill for about 5 minutes, turning occasionally, until the skin is blistered and the filling is heated through.

Warm the Tortillas

Place the tortillas on the grill for about 1 minute on each side until warm and slightly charred.
