Prepare the Tomatoes
Wash the green tomatoes and slice them into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Set Up the Breading Station
In three separate bowls, place the flour in one, the buttermilk in the second, and the cornmeal mixed with black pepper, cayenne pepper, and a pinch of salt in the third.

Bread the Tomatoes
Dredge each tomato slice in flour, shaking off the excess. Dip into the buttermilk, allowing any excess to drip off. Finally, coat with the cornmeal mixture, pressing gently to adhere.

Fry the Tomatoes
Heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded tomato slices in batches, without overcrowding the pan. Fry for about 3-4 minutes on each side until golden brown and crispy.

Remoulade Sauce

Mix the Ingredients
In a small bowl, combine mayonnaise, Dijon mustard, chopped capers, Worcestershire sauce, hot sauce, paprika, and lemon juice. Mix well until smooth.

Season the Sauce
Taste the remoulade sauce and season with salt and black pepper to taste. Adjust ingredients as desired.

Serve the fried green tomatoes warm with the remoulade sauce on the side for dipping.
