Preparation
Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler, stirring occasionally until smooth. Remove from heat and let it cool slightly.
Whip the Cream
In a large mixing bowl, pour the heavy cream and whip it using a hand mixer or stand mixer until soft peaks form. Be careful not to over-whip. Set aside.
Combine Chocolate and Yolks
Slowly fold the melted chocolate into the egg yolk mixture until fully combined.
Beat Egg Whites
Using a clean mixer attachment, beat the egg whites with a pinch of salt until stiff peaks form.
Fold in the Cream and Egg Whites
Gently fold in the whipped cream into the chocolate mixture until just combined. Then, fold in the beaten egg whites, being careful not to deflate the mixture.
Chilling
Transfer to Serving Dishes
Spoon the mousse into individual serving dishes or glasses. Smooth the tops with a spatula.
Chill the Mousse
Cover the dishes with plastic wrap and refrigerate for at least 2 hours, or until set.
Serving
Garnish and Serve
Before serving, garnish each mousse with chocolate shavings, fresh berries, and mint leaves if desired. Enjoy your rich and creamy chocolate mousse!
