Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Allow the rice to cool to room temperature.

Prepare the Roll
Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top edge.

Add Fillings
Place a few slices of yellowtail, julienned cucumber, and a sprinkle of truffle pearls horizontally across the center of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll it until the top edge of the nori is reached. Wet the edge with a little water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

Serve
Arrange the sushi rolls on a plate, serve with wasabi and truffle ponzu sauce on the side.
