Prepare the Potatoes

Peel and cut the Russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Prepare the Batter

In a bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water until the batter is smooth.

Fry the Cod

Dip the cod fillets into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying until golden and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Mix the Sauce

In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, and salt. Mix well and set aside.

Plate the Dish

Serve the crispy fried cod with fries on the side and tartar sauce for dipping.
