    Prepare the Tuna

    Cut the sushi-grade tuna into small cubes and place in a mixing bowl.

    Mix the Marinade

    In a separate bowl, combine the soy sauce, sesame oil, and sriracha sauce. Pour this mixture over the cubed tuna and gently toss to coat. Let it marinate in the refrigerator for at least 15 minutes.

    Prepare the Cucumber and Onions

    While the tuna marinates, thinly slice the cucumber and chop the green onions.

    Make the Wasabi Emulsion

    In a small bowl, whisk together the wasabi paste, mayonnaise, lemon juice, and water until smooth.

    To serve, place a generous spoonful of the marinated tuna on a plate. Top with cucumber slices and green onions. Drizzle the wasabi emulsion over the top and serve with crispy wonton chips on the side.
