Make the Filling
In a large bowl, combine the ground chicken, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully integrated.

Place a wrapper in the palm of your hand. Spoon about 1 tablespoon of filling into the center of the wrapper. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Repeat until all filling is used.

Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Once hot, place potstickers in the skillet, making sure they are not overcrowded. Cook for about 2-3 minutes until the bottoms are golden brown.

Add 1/4 cup of water to the skillet and immediately cover with a lid. Allow them to steam for about 5-7 minutes until the water has evaporated and the potstickers are cooked through.
