Prepare the Balsamic-Cherry Puree
In a blender, combine pitted cherries and a splash of balsamic vinegar. Blend until smooth and set aside.

Mix the Drink
In a glass filled with ice, pour 2 oz of Aperol followed by 1 oz of the balsamic-cherry puree.

Add Champagne
Top the mixture with 4 oz of champagne, stirring gently to combine.

Garnish with fresh cherries on top and serve immediately.
