    Prepare the Cajun Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into fries and toss them with olive oil, Cajun seasoning, salt, and pepper. Spread them on a baking sheet and bake for 25-30 minutes until golden and crispy.

    Cook the Fish

    In a skillet, heat olive oil over medium heat. Season the fish fillets with salt, pepper, and Cajun seasoning. Cook the fish for 3-4 minutes on each side or until cooked through and flaky.

    Prepare the Slaw

    In a bowl, combine shredded purple cabbage, shredded carrots, chopped cilantro, and the juice of one lime. Toss well and set aside.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet. Place a portion of the cooked fish on each tortilla, top with the cabbage slaw, and drizzle with chipotle sauce. Serve with lime wedges on the side.
