    Prepare the Pesto

    In a food processor, combine walnuts, fresh basil, garlic, olive oil, Parmesan cheese, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.

    Cook the Chicken

    Season the chicken breasts with salt and pepper. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side or until cooked through. Remove from the skillet and let it rest before slicing.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil. Sauté the mushrooms, red bell pepper, asparagus, zucchini, and yellow squash for about 5-7 minutes until tender but still crisp.

    Cook the Linguine

    In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and reserve some pasta water.

    Combine Everything

    Add the cooked linguine to the skillet with the sautéed vegetables. Add the walnut pesto and toss everything together. If the mixture is too thick, add a little reserved pasta water to loosen it.

    Serve

    Slice the chicken and serve it on top of the pesto linguine. Garnish with extra Parmesan and fresh basil. Serve with grilled bread on the side.
