    Prepare the Potato Cakes

    Peel and grate the potatoes. Place them in a bowl and mix with eggs, flour, salt, and pepper. Form the mixture into small cakes.

    Cook the Potato Cakes

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry the potato cakes for about 5-7 minutes on each side until golden brown. Remove and set aside.

    Prepare the Sorrel Aioli

    In a blender, combine sorrel leaves, mayonnaise, lemon juice, and garlic. Blend until smooth and season with salt and pepper to taste.

    Cook the Salmon

    Season the salmon fillets with paprika, salt, and pepper. In the same skillet, heat the remaining olive oil over medium-high heat. Cook the salmon for about 4-5 minutes on each side or until cooked through.

    Sauté the Greens

    In another skillet, add a little olive oil and sauté the mixed greens for 2-3 minutes until wilted. Season with salt and pepper.

    On each plate, place the potato cakes, top with the cooked salmon, and serve with sautéed greens and a generous dollop of sorrel aioli.
