Mousse Preparation

Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whip the Egg Yolks

In a separate bowl, whisk the egg yolks and granulated sugar together until pale and creamy. Add in the melted chocolate mixture and vanilla extract, mixing until well combined.

Beat the Egg Whites

In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse

Transfer the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.

Whip the Cream

In a large bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

Top the Mousse

Once the mousse has set, remove it from the refrigerator and dollop or pipe the whipped cream on top of each serving.
