Preparation
1. Cook the Beef
In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break the beef into smaller pieces as it cooks.
2. Sauté Vegetables
Add the chopped onion and minced garlic to the pot with the beef. Sauté for about 3-4 minutes until the onion becomes translucent.
3. Add Carrots and Potatoes
Stir in the diced carrots and potatoes. Cook for an additional 5 minutes, stirring occasionally.
4. Combine Remaining Ingredients
Add the frozen corn, beef broth, tomato paste, Worcestershire sauce, salt, and black pepper to the pot. Stir well to combine all ingredients.
5. Simmer the Mixture
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the vegetables are tender.
6. Finish and Serve
Once the vegetables are tender, remove the pot from heat. Stir in the chopped parsley. Serve hot, with optional toppings like shredded cheese, sour cream, or chopped green onions.
