Method

Preparation of Potato Pave

    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Thinly slice the potatoes using a mandoline. Layer them in a greased baking dish, seasoning each layer with salt and pepper. Pour olive oil over the layers.

    Bake the Potato Pave

    Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle with gorgonzola cheese, and bake for an additional 15-20 minutes until golden and crispy.

Cooking the Steak

    Season the Steak

    Season the prime NY strip steaks with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, adjusting the time for desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Making the Guajillo Demi-Glace

    Prepare the Guajillo Peppers

    Soak the guajillo peppers in hot water for about 15 minutes until softened. Remove stems and seeds, then blend with a small amount of the soaking liquid until smooth.

    Make the Demi-Glace

    In the same skillet used for the steaks, add the blended guajillo pepper puree and beef stock. Bring to a simmer and reduce by half. Stir in butter to finish.

Serving

    Plate the Dish

    Slice the rested NY strip steaks and serve alongside the potato pave and frying peppers. Drizzle the guajillo demi-glace over the steak and garnish with additional gorgonzola cheese if desired.
