Protein Preparation

    Fried Catfish

    Heat oil in a skillet over medium-high heat. Dip catfish filets in seasoned cornmeal and fry until golden brown, about 4-5 minutes per side.

    Blackened Catfish

    Rub catfish filets with blackening seasoning. Heat a cast-iron skillet until very hot and sear the filets for 3-4 minutes on each side until cooked through.

    Chicken Roulade

    Season chicken breasts and roll them with filling of choice. Sear in a skillet, then bake at 375°F (190°C) for 25-30 minutes until cooked through.

    Pork Chops

    Season pork chops with salt and pepper. Sear in a skillet over medium-high heat for 4-5 minutes on each side, then finish cooking in the oven at 350°F (175°C) for 10 minutes.

    Chicken Fricassee

    Sauté chicken thighs in a pot. Add broth and seasonings, cover, and simmer for 30 minutes until tender.

    Mac & Cheese

    Cook macaroni according to package instructions. In a separate pot, melt butter, add flour to create a roux, then stir in milk and cheese until melted. Combine with macaroni.

    Toss chopped kale with olive oil, lemon juice, salt, and your choice of nuts and dried fruit.

    Soup

    Heat your favorite soup until warmed through and serve in cups.

    Boil new potatoes until tender, then roast in the oven with olive oil until crispy.

    Cook field peas in salted water until tender, about 20 minutes.
