Protein Preparation

1. Fried Catfish

Heat oil in a skillet over medium-high heat. Dip catfish filets in seasoned cornmeal and fry until golden brown, about 4-5 minutes per side.

2. Blackened Catfish

Rub catfish filets with blackening seasoning. Heat a cast-iron skillet until very hot and sear the filets for 3-4 minutes on each side until cooked through.

3. Chicken Roulade

Season chicken breasts and roll them with filling of choice. Sear in a skillet, then bake at 375°F (190°C) for 25-30 minutes until cooked through.

4. Pork Chops

Season pork chops with salt and pepper. Sear in a skillet over medium-high heat for 4-5 minutes on each side, then finish cooking in the oven at 350°F (175°C) for 10 minutes.

5. Chicken Fricassee

Sauté chicken thighs in a pot. Add broth and seasonings, cover, and simmer for 30 minutes until tender.

6. Mac & Cheese

Cook macaroni according to package instructions. In a separate pot, melt butter, add flour to create a roux, then stir in milk and cheese until melted. Combine with macaroni.

7. Kale Salad

Toss chopped kale with olive oil, lemon juice, salt, and your choice of nuts and dried fruit.

8. Soup

Heat your favorite soup until warmed through and serve in cups.

9. Crispy New Potatoes

Boil new potatoes until tender, then roast in the oven with olive oil until crispy.

10. Field Peas

Cook field peas in salted water until tender, about 20 minutes.

11. Melon Salad

Combine mixed melons in a bowl and drizzle with lime juice.

12. Squash Casserole

Layer cooked squash with cheese, breadcrumbs, and bake until bubbly.

13. Heirloom Cornbread

Prepare cornbread batter and bake in a preheated oven until golden brown.

14. Beet Salad

Roast beets, then slice and toss with goat cheese and walnuts.

15. Delicata Squash Rings

Slice delicata squash into rings, toss with olive oil, and roast until tender.

16. Apple Salad

Combine diced apples with nuts, cheese, and a light vinaigrette.
