Cook the Farro
In a saucepan, combine 1 cup of farro with 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, or until tender. Drain any excess water and set aside.

Prepare the Vegetables
While the farro is cooking, chop the oyster mushrooms, squash, and okra. Halve the heirloom cherry tomatoes.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the oyster mushrooms and sauté for 5 minutes until they start to soften. Add the squash and okra, and cook for an additional 5-7 minutes until all vegetables are tender. Season with salt and pepper.

Make the Lime Dressing
In a small bowl, whisk together 2 tablespoons of lime juice, 1 tablespoon of olive oil, salt, and pepper to taste.

Assemble the Grain Bowl
In a large bowl, combine the cooked farro, sautéed vegetables, and halved cherry tomatoes. Drizzle with lime dressing and sprinkle with fresh herbs. Toss gently to combine.
