Prepare the Dough
In a large mixing bowl, combine the flour, cheddar cheese, softened butter, paprika, sumac, salt, and black pepper. Mix until the dough comes together.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Roll and Cut the Dough
On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness. Cut into strips or desired shapes.

Bake the Cheese Straws
Place the cut cheese straws onto the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until golden brown.

Serve
Allow to cool slightly before serving. Serve with fig jam on the side for dipping.
