    Prepare the Steak

    Season the flat iron steaks with salt and black pepper on both sides.

    Cook the Steak

    In a skillet over medium-high heat, add olive oil. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Eggs

    Cook the Eggs

    In the same skillet, reduce the heat to medium and melt butter. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

Chimichurri

    Make the Chimichurri

    In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and let sit for at least 10 minutes to allow the flavors to meld.

Crispy Potatoes

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Wash and halve the baby potatoes.

    Season and Roast

    Toss the halved potatoes with olive oil, salt, pepper, and chopped rosemary in a bowl. Spread them out on a baking sheet and roast for about 25-30 minutes, or until crispy and golden brown, flipping halfway through.

Assembly

    Serve

    On a plate, arrange the crispy potatoes, place the rested steak next to it, top with sunny-side up eggs, and drizzle chimichurri over everything.
