Method
Preparing the Salad Base

Prepare Romaine
Wash and dry the romaine lettuce. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Shave Parmesan
Using a vegetable peeler or cheese grater, shave or grate the parmesan cheese and set aside.

Prepare Tomatoes
Preheat your oven to 150°C (300°F). Cut the tomatoes in half and place them cut side up on a baking sheet.

Season and Roast
Drizzle olive oil over the tomatoes, and sprinkle with salt and pepper. Roast in the oven for about 2 hours or until the tomatoes are soft and concentrated in flavor.

Cool and Store
Allow the tomatoes to cool, then store in an airtight container until ready to use.

Blend Ingredients
In a blender, combine smoked tomatoes, mayonnaise, lemon juice, Worcestershire sauce, garlic powder, and a pinch of salt and pepper. Blend until smooth.

Taste and Adjust
Taste the dressing and adjust seasoning with additional salt and pepper, if needed. Set aside.
Assembling the Salad

In the large salad bowl with romaine, add the roasted tomato conserva, focaccia gremolata, and shaved parmesan.

Drizzle the smoked tomato Caesar dressing over the salad. Toss gently to combine all ingredients.
