Method

Preparing the Salad Base

    Prepare Romaine

    Wash and dry the romaine lettuce. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

    Shave Parmesan

    Using a vegetable peeler or cheese grater, shave or grate the parmesan cheese and set aside.

Making Tomato Conserva

    Prepare Tomatoes

    Preheat your oven to 150°C (300°F). Cut the tomatoes in half and place them cut side up on a baking sheet.

    Season and Roast

    Drizzle olive oil over the tomatoes, and sprinkle with salt and pepper. Roast in the oven for about 2 hours or until the tomatoes are soft and concentrated in flavor.

    Cool and Store

    Allow the tomatoes to cool, then store in an airtight container until ready to use.

Preparing Focaccia Gremolata

    Toast Focaccia

    Cut the focaccia bread into small cubes. Preheat a skillet over medium heat, add olive oil, and toast the focaccia cubes until golden brown and crispy.

    Finely chop garlic and parsley. In a bowl, combine the toasted focaccia, garlic, parsley, and lemon zest. Mix well and set aside.

Preparing Smoked Tomato Caesar Dressing

    In a blender, combine smoked tomatoes, mayonnaise, lemon juice, Worcestershire sauce, garlic powder, and a pinch of salt and pepper. Blend until smooth.

Assembling the Salad
