Method

Prepare Tomato Conserva

    Roast the Tomatoes

    Preheat your oven to 350°F (175°C). Slice the tomatoes in half and place them cut side up on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Roast for about 30-35 minutes or until the tomatoes are soft and slightly caramelized.

    Add Herbs

    Once the tomatoes are roasted, remove them from the oven and let them cool slightly. Toss them with fresh basil before setting aside.

Prepare Focaccia Gremolata

    Make Gremolata

    In a food processor, combine the focaccia bread, garlic, parsley, lemon zest, and olive oil. Pulse until the mixture resembles a coarse crumb. Set aside.

Prepare Smoked Tomato Caesar Dressing

    Blend the Dressing

    In a blender, combine the smoked tomatoes, mayonnaise, lemon juice, Worcestershire sauce, garlic powder, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Assemble the Salad

    Toss the Salad

    In a large bowl, combine the chopped romaine lettuce, roasted tomato conserva, and grated parmesan cheese. Drizzle with the smoked tomato Caesar dressing and toss gently to combine.

    Top with Gremolata

    Sprinkle the focaccia gremolata over the top of the salad before serving. Enjoy!
