Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until well combined.
Incorporate Butter
Cut the unsalted butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
Add Water
Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.
Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Fruit
Wash and chop the fresh seasonal fruit into small pieces (if necessary). Place the fruit in a mixing bowl.
