Juicing the Citrus

Squeeze fresh lemons and limes to extract 1 oz each of lemon juice and lime juice. Make sure to strain out any seeds.

Making the Simple Syrup

In a small saucepan, combine equal parts sugar and water (1:1 ratio). Heat over low heat until the sugar dissolves completely, then allow it to cool.

Combine Ingredients

In a cocktail shaker, add 2 oz of Pisco, 1 oz of fresh lemon juice, 1 oz of fresh lime juice, and 1 oz of simple syrup.

Shake

Add 1 cup of ice cubes to the shaker. Secure the lid and shake vigorously for about 15 seconds until well chilled.

Serving

Strain and Garnish

Strain the mixture into a chilled cocktail glass. Add 2 dashes of Angostura bitters on top, and garnish with a lime wheel or a cherry.
