Preparation

    Prepare the Mushrooms

    Clean the mixed mushrooms by wiping them with a damp cloth. Slice them into bite-sized pieces.

    Chop the Vegetables

    Dice the onion, green bell pepper, and celery to prepare the holy trinity.

Cooking

    Sauté the Mushroom Mix

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the sliced mixed mushrooms and cook for about 5-7 minutes until browned.

    Add the Holy Trinity

    Stir in the diced onion, green bell pepper, and celery. Cook for another 5-7 minutes until the vegetables soften.

    Cook the Rice

    Add the Congaree and Penn Jupiter rice to the pot, followed by the vegetable broth. Stir well.

    Season the Gumbo

    Add the Cajun seasoning, bay leaves, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 25-30 minutes or until the rice is tender.

Serving

    Garnish and Serve

    Once the gumbo is ready, remove the bay leaves. Serve hot in bowls, garnished with pickled okra and chopped fresh parsley.
