Dry-aged Kinki with Caviar

Canapés

    Prepare the Baguette

    Slice the baguette into 1/2 inch thick pieces and arrange on a baking sheet.

    Make Cream Cheese Spread

    In a bowl, mix the cream cheese, chopped chives, and a pinch of salt until smooth.

    Assemble Canapés

    Spread the cream cheese mixture on each baguette slice. Top with a slice of smoked salmon and a few capers. Drizzle with Dijon mustard.

Dry-aged Kinki with Caviar

    Season the Kinki

    Sprinkle the dry-aged Kinki fillets with sea salt and black pepper on both sides.

    Sear the Fish

    Heat olive oil in a skillet over medium heat. Once hot, add the Kinki fillets and cook for 4-5 minutes on each side until golden brown and cooked through.

    Serve with Caviar

    Plate the Kinki fillets and top each with a generous spoonful of caviar.

Hokkaido Uni with Corn Chawanmushi

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, dashi stock, soy sauce, and salt until well combined.

    Add Sweet Corn

    Fold in the sweet corn gently into the egg mixture.

    Steam the Chawanmushi

    Pour the mixture into small cups. Steam for about 15-20 minutes until set.

    Top with Uni

    Once set, carefully place Hokkaido uni on top of each chawanmushi before serving.
