    Prepare the Ingredients

    Rinse the black lentils under cold water, and set aside. Peel and dice the Seminole pumpkin into small cubes. Chop the onion and mince the garlic.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.

    Combine Ingredients

    Add the diced Seminole pumpkin, rinsed black lentils, vegetable broth, ground cumin, salt, and black pepper to the pot. Stir well to combine all ingredients.

    Simmer the Soup

    Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils and pumpkin are tender.

    Finish the Soup

    Once the lentils and pumpkin are cooked, stir in the lemon juice and half of the chopped cilantro. Adjust seasoning with more salt and pepper if desired.

Serving

    Ladle the soup into bowls and top each serving with diced avocado and the remaining chopped cilantro for garnish.
