    Prepare the Sea Bass

    Rinse the fresh sea bass under cold water and pat dry with paper towels. Cut into serving-sized portions.

    Season and Sear

    In a skillet, heat olive oil over medium-high heat. Season the sea bass with sea salt and lemon zest, then place skin-side down in the skillet. Sear for 4-5 minutes until crispy.

    Finish Cooking

    Flip the sea bass and cook for another 2-3 minutes. Remove from heat and let rest for 1 minute.

    Plate and Garnish

    Place the seared sea bass on a plate, garnish with microgreens, and serve immediately.

    Prep the Duck Breast

    Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. This helps render the fat.

    Cook the Duck

    In a cold skillet, place the duck breast skin-side down, then turn the heat to medium. Cook for 6-8 minutes until the skin is crispy and golden. Flip and cook for another 4-5 minutes for medium-rare.

    Make the Glaze

    Remove the duck from the skillet and let rest. In the same skillet, add honey, balsamic vinegar, thyme, and minced garlic. Cook for 2-3 minutes until slightly thickened.

    Serve

    Slice the duck breast and drizzle the honey-balsamic glaze over it. Serve with seasonal vegetables.

    Wash the fresh mixed berries gently under cold water and drain well.

    In a bowl, mix mascarpone cheese with vanilla extract until smooth and creamy.
