Cook the Polenta
In a pot, bring water to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for about 30 minutes, stirring occasionally. Once thickened, stir in Parmesan cheese, butter, and salt until creamy. Keep warm.
Crispy Pork Belly

Prepare the Pork Belly
Score the skin of the pork belly and season with salt and black pepper. Heat olive oil in a skillet over medium heat. Place the pork belly skin-side down and cook until the skin is crispy, about 10-15 minutes. Flip and cook for an additional 10 minutes until cooked through. Let rest before slicing.
