Meatloaf

Whipped Potatoes

Method

Meatloaf

  1. 1

    Prepare the Meatloaf

Preheat your grill to medium heat (about 350°F). In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and Cheerwine soda. Mix until just combined.

  2. 2

    Form the Loaf

Shape the mixture into a loaf shape and place it on a piece of aluminum foil. Make sure to mold it tightly to prevent the meatloaf from falling apart during grilling.

  3. 3

    Grill the Meatloaf

Place the aluminum foil with the meatloaf on the grill. Close the grill lid and cook for about 45-50 minutes, or until the internal temperature reaches 160°F.

Whipped Potatoes

  1. 4

    Cook the Potatoes

In a large pot, add the peeled and chopped potatoes and cover with water. Bring to a boil over medium-high heat and cook for about 15-20 minutes, or until tender.

  2. 5

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Onion Rings

  1. 6

    Prepare the Batter

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually add cold water until the batter reaches a smooth consistency.

  2. 7

    Fry the Onion Rings

Heat oil in a deep fryer or large pot to 350°F. Dip each onion ring into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Cheerwine BBQ Sauce

  1. 8

    Make the Sauce

In a saucepan over medium heat, combine ketchup, Cheerwine soda, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, salt, and black pepper. Stir well and bring to a simmer. Cook for about 10-15 minutes, stirring occasionally until slightly thickened.
