Calamari

Spicy Marinara Sauce

Method

Preparing the Calamari

  1. 1

    Marinate the Calamari

In a bowl, pour the buttermilk over the cleaned calamari rings. Make sure they are fully submerged and let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Prepare the Coating

In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create the coating mixture.

Frying the Calamari

  1. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat. Make sure the oil is hot enough for frying (around 350°F or 175°C).

  2. 4

    Coat the Calamari

Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour and cornstarch mixture, ensuring they are evenly coated.

  3. 5

    Fry the Calamari

Carefully place the coated calamari rings in the hot oil, frying in small batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

  4. 6

    Drain and Serve

Remove the fried calamari from the oil and place them on paper towels to drain excess oil. Serve immediately with the spicy marinara sauce.

Preparing the Spicy Marinara Sauce

  1. 7

    Cook the Sauce

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 8

    Add Tomatoes and Seasonings

Stir in the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally.

  3. 9

    Finish the Sauce

Add the chopped fresh basil to the sauce and stir well. Remove from heat and set aside to cool slightly before serving.
