French Toast Preparation

Make the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Soak the Brioche
Dip each slice of brioche into the egg mixture, ensuring both sides are well coated. Allow to soak for about 2-3 minutes.

Chai Crème Anglaise Preparation

Heat the Dairy
In a saucepan, combine the milk and heavy cream. Heat over medium heat until just simmering. Remove from heat and add the chai tea bags, steeping for about 10 minutes.

Thicken the Sauce
Cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Strain through a fine sieve and set aside.
Honeycrisp Apple Preparation

Prepare the Apples
Core and slice the honeycrisp apple. In a bowl, toss the apple slices with lemon juice and brown sugar to prevent browning and add flavor.
Burnt White Chocolate Crumble Preparation

Burn the Chocolate
In a dry skillet over medium heat, melt the white chocolate until it begins to turn a light brown color. Stir frequently to prevent burning.

In a bowl, combine the burnt white chocolate, flour, butter, and brown sugar. Mix until crumbly. Bake at 350°F (175°C) for about 10 minutes until crunchy.
