Fried Flounder

    Prepare the Flounder

    In a shallow dish, mix together the flour, cornmeal, salt, and black pepper.

    Batter the Fish

    In another bowl, whisk the eggs and buttermilk together until well combined. Dip each flounder fillet into the egg mixture, allowing excess to drip off, then coat in the flour mixture.

    Fry the Fish

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated flounder fillets and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Poblano Remoulade

    Roast the Poblano Pepper

    Char the poblano pepper over an open flame or under a broiler until the skin is blistered. Place it in a bowl and cover with plastic wrap for 10 minutes to steam. Peel the skin off, remove the seeds, and chop finely.

    Mix the Remoulade

    In a bowl, combine the chopped poblano, mayonnaise, Dijon mustard, lemon juice, minced garlic, salt, and black pepper. Mix until smooth and creamy.

Sandwich Assembly

    Prepare the Lettuce and Tomato

    Wash the romaine lettuce leaves and pat dry. Slice the tomato into thick slices.

    On each sandwich bun, layer a leaf of romaine lettuce, a fried flounder fillet, a slice of tomato, and a generous dollop of poblano remoulade. Top with the other half of the bun.
