Preparation

    Prepare the Filet Mignon

    Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

    Season the Steak

    Pat the filet mignon dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Add the seasoned filet mignon to the hot skillet. Sear for 4-5 minutes on one side until a golden-brown crust forms.

    Flip and Cook

    Flip the filet mignon and cook for an additional 4-5 minutes for medium-rare, or longer if desired.

    Add Butter and Rosemary (Optional)

    For added flavor, add the butter and fresh rosemary to the pan during the last minute of cooking. Baste the filet with the melted butter.

Resting

    Rest the Steak

    Remove the filet mignon from the skillet and transfer to a plate. Allow to rest for at least 5 minutes before slicing to let the juices redistribute.
