Preparing the Cranberry Base

Step 1: Cook the Cranberries
In a medium saucepan, combine the fresh cranberries and water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10 minutes or until the cranberries are soft and have burst.

Step 2: Strain the Mixture
Remove the saucepan from heat and let the mixture cool slightly. Use a fine mesh strainer to strain the cranberry mixture into a bowl, discarding the solids. You should have a cranberry liquid base.

Step 3: Add Sugar and Vinegar
While the cranberry liquid is still warm, stir in the sugar until dissolved completely. Then add the apple cider vinegar and mix well.

Step 7: Strain the Bitters
After 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean bottle. Discard the solids and seal the bottle tightly.

Store the cranberry bitters in a cool, dark place. Use as a cocktail ingredient or to enhance beverages to taste.
