    Prepare the crab mixture

    In a large mixing bowl, combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and chopped green onion. Mix until well incorporated.

    Add the binding ingredients

    Add the beaten egg, breadcrumbs, salt, and black pepper to the crab mixture. Gently fold the ingredients together until just combined. Be careful not to break up the crab meat too much.

    Form the crab cakes

    Using your hands, form the mixture into patties, about 2-3 inches in diameter. Place the crab cakes on a plate and refrigerate for at least 30 minutes to help them hold their shape while cooking.

    Cook the crab cakes

    Heat oil in a skillet over medium heat. Once hot, add the crab cakes and cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel to drain excess oil.

Zesty Remoulade

    Mix the ingredients

    In a small bowl, combine mayonnaise, Dijon mustard, chopped capers, lemon juice, hot sauce, minced garlic, and chopped fresh parsley. Stir until smooth and well combined.

    Chill

    Cover the remoulade and refrigerate for at least 15 minutes to allow the flavors to meld before serving.
