Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's hot enough for the cakes.

Prepare Ramekins
Grease four 6-ounce ramekins with 1 tablespoon of unsalted butter and dust with cocoa powder. This will prevent the cakes from sticking.
Make the Batter

Melt Chocolate and Butter
In a microwave-safe bowl, combine 115g of bittersweet chocolate and 115g of unsalted butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.

Mix Sugar and Eggs
In a separate bowl, whisk together 100g of granulated sugar, 2 large eggs, and 1 large egg yolk until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously to combine.

Add Flour and Vanilla
Sift in 30g of all-purpose flour and add 1 teaspoon of vanilla extract. Gently fold the mixture until just combined and smooth.
Bake the Cakes

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft and slightly jiggly.
