Biscuit Dough
Prepare the Biscuit Dough
Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
Cut in the Butter
Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs.
Add Buttermilk
Pour the buttermilk into the mixture and stir until just combined. Do not overmix.
Shape Biscuits
Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter or a round glass.
Bake
Transfer the biscuits to a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
Chicken
Cook the Chicken
While the biscuits are baking, season the chicken breasts with salt, black pepper, and paprika. Heat olive oil in a skillet over medium heat.
Sear the Chicken
Add the chicken breasts to the skillet and cook for 6-7 minutes on each side or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
Rest the Chicken
Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

In a small bowl, mix together the softened unsalted butter and honey until smooth. Set aside.
