    Prepare the Waffle Batter

    In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, beat the eggs and then mix in the milk, melted brown butter, and vanilla extract. Combine the wet and dry ingredients, mixing until just combined. Let the batter rest for about 10 minutes.

    Cook the Waffles

    Preheat the waffle iron. Once hot, pour an appropriate amount of batter onto the waffle iron and cook according to the manufacturer's instructions until golden brown. Repeat until all batter is used.

Chicken

    Marinate the Chicken

    In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

    In a shallow dish, place the flour and season with additional salt and pepper if desired. Take the marinated chicken out of the buttermilk and dredge each piece in the seasoned flour, shaking off any excess.

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken thighs and fry for about 5-7 minutes per side, or until golden brown and cooked through. Remove from the oil and drain on paper towels.

Blueberry Butter

Bourbon Maple Syrup

    In a small saucepan over low heat, combine the maple syrup and bourbon. Stir until warmed through and well mixed. Do not let it boil.

Assembly

    Assemble the Dish

    On a plate, stack a couple of waffles, top with fried chicken, and then spread a generous amount of blueberry butter on top. Drizzle with bourbon maple syrup and garnish with fresh blueberries.
