Return the mixture to the saucepan and cook over low heat until it thickens slightly. Stir in vanilla extract. Chill the mixture in the refrigerator for at least 4 hours.

Churn the Ice Cream
Once chilled, pour the ice cream base into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze for at least 2 hours before serving.

In a blender, combine the fresh fruit, lemon juice, and sugar. Blend until smooth. In a saucepan, heat the water and remaining sugar until dissolved, then combine with the fruit mixture. Chill in the refrigerator for at least 2 hours.
