Tomato Confit Preparation

  1. 1

    Prepare the Tomatoes

Preheat the oven to 300°F (150°C). In a baking dish, combine the cherry tomatoes, olive oil, garlic cloves, thyme, and salt. Toss to coat the tomatoes evenly.

  2. 2

    Bake the Tomatoes

Bake the tomatoes in the preheated oven for about 1 hour, or until they are soft and bursting. Allow to cool.

Salsa Verde Preparation

  1. 3

    Blend the Ingredients

In a food processor, combine parsley, basil, capers, garlic, olive oil, lemon juice, and salt. Pulse until the mixture is smooth but still slightly chunky. Adjust seasoning as necessary.

Salad Assembly

  1. 4

    Assemble the Salad

On a serving plate, place a bed of fresh arugula. Tear the burrata and place it on top. Add spoonfuls of tomato confit and drizzle with salsa verde.

  2. 5

    Add Crunch

Sprinkle toasted hazelnuts over the salad and drizzle with balsamic reduction to taste.
