Method

Preparation

  1. 1

    Cook the Linguine

In a large pot of salted boiling water, cook the squid ink linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

  2. 2

    Prepare the Shrimp

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

  3. 3

    Add Shrimp and Tomatoes

Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes. Add the cherry tomatoes and cook until they soften slightly, about 2 more minutes.

  4. 4

    Mix Ingredients

Add the cooked linguine to the skillet, along with the reserved pasta water, and toss everything together. Season with salt, black pepper, and minced serrano chile to taste.

  5. 5

    Prepare Breadcrumbs

In a separate pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the breadcrumbs and cook, stirring frequently, until golden brown and crispy.

  6. 6

    Serve

Plate the linguine and shrimp mixture, then top with the crispy garlic breadcrumbs and chopped parsley.
